Cleaned Up Cosmic Brownies

My 10 year old son and I made these AMAZING Cleaned Up Cosmic Protein Brownies this past weekend and I just have to share them with you!!

These healthy protein brownies are easy to make, fudgy, moist, grain free and have a rich chocolate flavor. They're made with almond flour, coconut sugar and protein powder (we used Chocolate Vegan Shakeology) for a healthy treat!


Prep: 15 minutes mins

Cook: 25 minutes mins

Total: 40 minutes mins

Makes: 16 brownies


Wet Ingredients:

1/2 cup refined coconut oil

3 eggs

3/4 cup coconut sugar

2 teaspoons vanilla extract

1/2 cup heavy cream


Dry Ingredients:

3 cups semi-sweet chocolate chips (divided)

1/2 cup chocolate protein powder

1/3 cup blanched almond flour

2 tablespoons cocoa powder

1/4 teaspoon salt

Candy bits (found here)


Instructions:

  1. Preheat the oven to 350° Fahrenheit. Line an 8x8 pan with parchment paper and set aside. (For a thinner brownie, you can use a 9x12 pan)
  2. Combine 1 cup of the chocolate chips (keep the other 1/2 cup aside for now) and coconut oil in a bowl. If you have a scale, please use it!
  3. Melt in the microwave using 30 second intervals, stirring between each, until fully melted.
  4. In a separate bowl or stand mixer, add the eggs and coconut sugar and beat together for about 1 minute. Then beat in the vanilla and the chocolate once melted.
  5. Add in the remaining dry ingredients and beat until a smooth batter form.
  6. Fold in 1/2 cup of the chocolate chips.
  7. Add the batter to the prepared pan and bake for 22-28 minutes. (We did 25 minutes and they came out perfect.)
  8. While the brownies are in the oven, take the the heavy cream and heat on stovetop to a low boil. Once the bubbles begin to form on the edges, add remaining 1 1/2 cups of chocolate chips and stir until completely melted.
  9. Once the brownies are done, remove from the oven and let cool completely in the pan.
  10. Pour the chocolate ganache over the cooled brownies along with the candy bits and refrigerate for 1 hour until set.
  11. Once set, remove from refrigerator, lift out parchment paper, slice into squares. Enjoy!

For a nut free option, you can try subbing the almond flour for oat flour, but I have not tried this myself and cannot guarantee the result. 


My son has suggested we don’t need to ever buy cosmic brownies from the store again and when we make them again, do them once with no topping, and once with M&Ms. ðŸ˜‰

Mom update (Monday): the doctor's keep saying she's doing well. She is breathing on her own for a while then when it becomes too laboring they turn on the oxygen to assist her but its only around 20%. Then they turn it off again and keep going back and forth. The X-rays are not showing any difference on the pneumonia. They say that this is to be expected though with her body being immunosuppressed ... (from the heart transplant). The cardiologist continues to monitor her heart function and says it's doing great! They are trying to give her lasiks to increase her outflow (which is how to get the pneumonia out) but when they do her blood pressure goes too low so they back off. They are optimistic and say it will just take time. Their first goal is to get her stabilized enough to take out the tube. As a family, we appreciate the continued prayers and thoughts. It's been tough knowing that when she does "wake up" that it will be a new year...but as my dad so wond
